Our Food Rocks!!!

Greetings from the mountains!  We are off and running with all activities in full swing.  The campers have settled into their schedules and you should be receiving a letter describing soon what they have chosen and a little more about their counselor.  Our first trips went out this morning including a climbing trip to Cedar Rock and a canoe trip to the Tuckaseegee River.

We work hard every year to some up with great food that the kids will love.  We are constantly coming up with new and better items.  Lately, we have made efforts to use some local foods, which has primarily been vegatables and fruit.  For example, today was Taco day at lunch a favorite among many campers and staff. The garden is producing a lot of fresh herbs and vegetables so today we made homemade salsa and it was huge hit!  We like serving fresh items and homemade desserts and cookies.  You won’t find margarine in our camp kitchen!  All the cookies, cakes and dessert are made with real butter and boy does it make a difference.  Snacks include fresh apples, peaches and bananas all day.  Our evening snack rotates between, nachos, soft pretzels, cheese and crackers, and cookies made from scratch.  Milk is also available nightly.  We try not to give them too much sugar right before bed time.  The kitchen staff is out doing themselves this summer and many staff are mentioning tightening waistlines but not complaining about the food!  There must be some correlation.  If you  would like to see this month’s menus, CLICK HERE .

Tonight’s cabin overnights include:

  • Hillside going to Lower Rocky Top
  • Lakeside going to Dogwood Den
  • Chalet going to Rocky Springs
  • Flattop going to Still Oaks

I hope you have a great day.
